The Ternary

For some after work drinks and accompanying dinner, we headed to The Ternary, eager to try their new cocktail pairings and sample some of the beautifully matched ‘tapas’ style dishes!

Food and Drinks:
Our first pairing was the Flower Power cocktail with an accompanying dish of Pulled Peppered Beef. The cocktail itself was beautifully presented, with a rose made out of a strawberry, lychee on a stick and flowers adorning the rim. The vodka and chambord combination made the cocktail light and refreshing with a good kick, and the fruity lychee and tangy lemon blended perfectly. The beef came in a crispy, buttery and flaky pastry roll, and was so well seasoned – the strong flavours packing a huge punch alongside the light cocktail.

Our second combination was the Raspberry Rose Fizz cocktail with the Ternary’s famous Tandoori Salmon, which we were most excited for! The cocktail was served tall, and the raspberry infused gin formed a great base for the aperol, lemon and rose syrup. This was slightly tart on the palette, and was balanced really nicely with the spiced fish, with was oily and rich. We particularly liked this pairing out of the three we had as it was the most unique, and a sip of the cocktail went down smoothly with an accompanying bite of the delicious salmon!

Finally, to round out the tasting, we finished with an Espresso Martini, paired with some Grilled Cajun Prawns. Coffee lovers will especially love this espresso martini, which was delicious and sweet at first sip, but had a great bitter note and aromas to round it out. The prawns and chorizo were generously served, with plenty of accompanying capsicum and tomato to add some refreshing notes to the dish.

Ambience:
The Ternary Bar is located on level 1 of the Novotel in Darling Harbour, with beautiful views over the serene harbour. There’s plenty of lounge or table seating for both small and large groups, and a bar area with stools as well. The staff were so friendly and knowledgeable about the drinks and pairings, and we were treated to service with a smile, which we were so pleased with!

There is a great selection of bar snacks and cocktails if you’re going with an a-la-carte selection, and the staff are more than happy to recommend their faves as well! Overall, it was a really enjoyable setting to spend a couple of hours savouring our drinks and soaking up the vibes.

Overall:
Our tasting at the Ternary was nothing short of spectacular – we were thoroughly impressed by the attentive service, creative cocktails and flavourful eats that we were treated to! We would thoroughly recommend the Ternary Bar for anything from a work event to a romantic evening with that special someone, and the cocktail pairing was such a special way to experience the venue!
